Restructured restaurant development to come to central Phoenix

PHOENIX — Foodies, rejoice! Thanks to the Valley’s top restaurateurs, there will soon be a whole new slew of delicious joints in the heart of Phoenix, the Phoenix Business Journal reported.
The Colony, which will be located on Seventh Street near Missouri Avenue in Phoenix, Arizona, is set to house three restaurants: The Herb Box, Stock & Stable and Pure Sushi.
The location is home to a vacant 1950s-era building, which will be renovated and joined by a new, 8,100-square-foot building.
David Sellers, co-founder of Western Vertical Holdings, said the Colony’s location is the perfect example of the market shift which led to occupying vacant land within a built-up area.
“Densely populated areas are now more desirable for restaurants and retail businesses than strip centers,” Sellers said.
Sellers is also president of LGE Design Build, the general contractor for both phases of the project.
Bob Agahi, co-founder of Western Vertical Holdings, said they declined several national chains who took interest locating in the Colony.
Michael Rumpeltin, founder of Phoenix-based Brick & West Design and the project designer for the Colony, said his passion for food-focused projects drives him to create these environments.
The Colony is projected to open its first three restaurants in November.
